Vicious Pie


I absolutely love cooking and baking.

So every time one of the Holidays is around the corner I plan to make something special…

Halloween is not really traditional Holiday in Slovenia, but as everything else, we kind of »export« it from America and now it’s getting more and more popular…

I don’t really care about its origin, I just love holidays in general and I like to celebrate absolutely everything.

I just think it’s fun to have a reason to bake something special, get together with friends and just have fun…

Anyway, this year I prepared cute, little »Halloween muffines« (I’m sorry I posted only Slovenian version, will do my best to translate that one as well) and I made two pies. Healthy, vegan sugar-free version and one typical very sweet, traditional American pie.

I’ll post about the second one in my next post.

But here is the recipe for the first one….

 

 

SUGAR-FREE VEGAN APPLE PIE

I swear, at first, I thought this pie was enchanted….nothing went as I planned.

But at the end…i have to admit, it turned out absolutely delicious.

And don’t let the looks turn you off…because it’s really tasty, healthy and very simple to make…

RECIPE

I took the recipe from Slovenian cookbook TOPLO PRIPOROČAM, but changed it a little bit…(I never really go »by the book« with my cooking and baking, I always try to change, add or mix something).

So here it is:

Dough

  • 2 cups Spelt Flour
  • 1 cup Wheat Flour
  • 1 cup of Almond Flour
  • 1 tablespoon wine stone baking powder
  • 0,25 teaspoon Salt
  • 100 g coconut butter
  • 1 tablespoon coconut cream
  • 1 cup almond milk
  • 2 tablespoons oil
  • 2 tablespoons Stevia Crystal (I use this one)

 

Filling

  • 12 apples
  • 2 table spoons cinnamon

 

This pie is really super easy to make.

Firs we mix all the dry ingredients (Wheat flour, Spelt flour, Almond flour, Stevia, winestone baking powder and salt).

Then we add coconut butter, oil and coconut cream. At the end, we slowly add almond milk and knead the dough.

We leave the dough in the fridge for a while (overnight is ideal, but if we don’t have time, at least half an hour will be enough).

After the dough is chilled, we roll it on the table, put it into the baking tray and add the filling.

If we have enough dough, we can also decorate it (unfortunately I didn’t have enough of it, so mine was very simple).

We pre-heat the oven and bake it at 180 °C for about 25 minutes.

This pie is so easy to make and is quite healthy so it’s perfect if we want to keep our healthy diet during the Hollydays.
